    Watermelon, Feta, and Mint Salad

    Ingredients

    • 1/2 small watermelon (red seeded), cubed (about 4 cups)
    • 4 oz feta cheese, crumbled or cubed
    • 1/3 cup fresh mint leaves, torn
    • 1 small shallot, thinly sliced (or 2 tablespoons red onion)
    • 2 tablespoons olive oil
    • 1 tablespoon fresh lime juice
    • Flaky sea salt and black pepper

    Instructions

    1. Toss the watermelon cubes into a wide serving bowl or platter.
    2. Scatter the feta, mint, and shallot over the top.
    3. Drizzle with olive oil and lime juice.
    4. Finish with a pinch of flaky salt and a few cracks of black pepper.
    5. Serve right away — this one is best within an hour of dressing.
