Smashed Cucumber Salad with Garlic and Sesame

Ingredients
- 2 cucumbers
- 1 teaspoon kosher salt
- 2 cloves garlic, finely grated or minced
- 1 tablespoon soy sauce
- 2 teaspoons rice vinegar
- 1 teaspoon sugar
- 1 tablespoon toasted sesame oil
- 1 teaspoon chili crisp or red pepper flakes (optional)
- 1 tablespoon toasted sesame seeds
- 2 tablespoons chopped cilantro or scallions
Instructions
- Lay the cucumbers on a cutting board and gently smash them with the flat side of a knife or a rolling pin until they crack open. Tear or roughly chop into bite-size pieces.
- Toss the cucumbers with the kosher salt in a colander and let them drain for 15 minutes — this gets rid of the extra water so the salad stays crunchy.
- While the cucumbers drain, whisk the garlic, soy sauce, rice vinegar, sugar, sesame oil, and chili crisp together in a small bowl.
- Pat the cucumbers dry, transfer to a serving bowl, and pour the dressing over the top. Toss well.
- Finish with sesame seeds and cilantro or scallions, and serve right away.
