    Smashed Cucumber Salad with Garlic and Sesame

    Ingredients

    • 2 cucumbers
    • 1 teaspoon kosher salt
    • 2 cloves garlic, finely grated or minced
    • 1 tablespoon soy sauce
    • 2 teaspoons rice vinegar
    • 1 teaspoon sugar
    • 1 tablespoon toasted sesame oil
    • 1 teaspoon chili crisp or red pepper flakes (optional)
    • 1 tablespoon toasted sesame seeds
    • 2 tablespoons chopped cilantro or scallions

    Instructions

    1. Lay the cucumbers on a cutting board and gently smash them with the flat side of a knife or a rolling pin until they crack open. Tear or roughly chop into bite-size pieces.
    2. Toss the cucumbers with the kosher salt in a colander and let them drain for 15 minutes — this gets rid of the extra water so the salad stays crunchy.
    3. While the cucumbers drain, whisk the garlic, soy sauce, rice vinegar, sugar, sesame oil, and chili crisp together in a small bowl.
    4. Pat the cucumbers dry, transfer to a serving bowl, and pour the dressing over the top. Toss well.
    5. Finish with sesame seeds and cilantro or scallions, and serve right away.
