    Smashed Persian Cucumber Salad

    Ingredients

    • 6 Persian cucumbers
    • 1 tsp salt
    • 2 Tbsp rice vinegar
    • 1 Tbsp soy sauce
    • 1 tsp toasted sesame oil
    • 1 tsp sugar
    • 2 cloves garlic, minced
    • 1 tsp toasted sesame seeds
    • Pinch of red pepper flakes (optional)

    Instructions

    1. Trim the ends off the cucumbers, then smash them gently with the flat side of a knife until they split. Tear or cut into bite-sized pieces.
    2. Toss the cucumbers with the salt and let them sit in a colander for about 10 minutes. Pat dry to remove excess water.
    3. In a bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar, and garlic.
    4. Add the cucumbers and toss to coat. Sprinkle with sesame seeds and red pepper flakes.
    5. Chill for a few minutes and serve cold.
