Smashed Persian Cucumber Salad

Ingredients
- 6 Persian cucumbers
- 1 tsp salt
- 2 Tbsp rice vinegar
- 1 Tbsp soy sauce
- 1 tsp toasted sesame oil
- 1 tsp sugar
- 2 cloves garlic, minced
- 1 tsp toasted sesame seeds
- Pinch of red pepper flakes (optional)
Instructions
- Trim the ends off the cucumbers, then smash them gently with the flat side of a knife until they split. Tear or cut into bite-sized pieces.
- Toss the cucumbers with the salt and let them sit in a colander for about 10 minutes. Pat dry to remove excess water.
- In a bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar, and garlic.
- Add the cucumbers and toss to coat. Sprinkle with sesame seeds and red pepper flakes.
- Chill for a few minutes and serve cold.
