Drying & Storing Herbs

Ingredients
- Fresh Herb Mix from this week's box
- Twine or rubber bands, for bundling
- A clean screen or paper towels
- Clean, airtight glass jars
- Labels
Instructions
- Air-drying (best flavor retention): tie small, loose bundles with a rubber band or twine — rubber bands shrink as the stems dry, so the herbs do not slip out.
- Hang the bundles upside down in a warm, dark, dry space with good airflow for 1 to 2 weeks. Or strip the leaves and lay them flat on a clean screen or paper towel.
- Dehydrator (fast and controlled): arrange single layers of leaves or sprigs on the trays, set the machine to low heat between 95°F and 115°F, and check after 1 to 4 hours until the leaves are crisp and brittle.
- Microwave (best for small batches): place single layers of leaves between two plain paper towels on a microwave-safe plate and microwave on high for 1 to 2 minutes, checking and stirring every 30 seconds.
- Storage: crush the leaves or leave them whole, and store them in clean, airtight glass jars.
- Keep the jars in a cool, dark place and label them with the date.
