Creamy Avocado, Cucumber & Dill Salad

Ingredients
- 2 ripe avocados, diced
- 1/3 cup greek yogurt
- 2 cucumbers, sliced into half-moons
- 2 spring onions, thinly sliced
- 2 tablespoons fresh dill, chopped
- Juice of 1 lemon (from the citrus mix)
- 2 tablespoons olive oil
- 1/4 teaspoon sea salt
- Freshly ground black pepper
Instructions
- Slice the cucumbers into half-moons, place in a colander, and toss with a pinch of salt. Let them drain for 10 minutes so the salad doesn't get watery.
- While the cucumbers drain, dice the avocados, thinly slice the spring onions, and chop the dill.
- Transfer the cucumbers to a large bowl and add the avocados, yogurt, spring onions, and dill.
- Squeeze the lemon over the top, drizzle with olive oil, and season with salt and pepper.
- Toss gently so the avocado holds its shape, taste for seasoning, and serve right away.
