    Creamy Avocado, Cucumber & Dill Salad

    Ingredients

    • 2 ripe avocados, diced
    • 1/3 cup greek yogurt
    • 2 cucumbers, sliced into half-moons
    • 2 spring onions, thinly sliced
    • 2 tablespoons fresh dill, chopped
    • Juice of 1 lemon (from the citrus mix)
    • 2 tablespoons olive oil
    • 1/4 teaspoon sea salt
    • Freshly ground black pepper

    Instructions

    1. Slice the cucumbers into half-moons, place in a colander, and toss with a pinch of salt. Let them drain for 10 minutes so the salad doesn't get watery.
    2. While the cucumbers drain, dice the avocados, thinly slice the spring onions, and chop the dill.
    3. Transfer the cucumbers to a large bowl and add the avocados, yogurt, spring onions, and dill.
    4. Squeeze the lemon over the top, drizzle with olive oil, and season with salt and pepper.
    5. Toss gently so the avocado holds its shape, taste for seasoning, and serve right away.
