Mizuna Lettuce Salad
Ingredients
1 tablespoon vegetable oil
1 pound carrots, peeled, trimmed, and sliced diagonally into ⅜-inch coins
¼ teaspoon salt (to taste)
⅛ teaspoon ground ginger (optional)
1/16 teaspoon garlic powder
or
ground cinnamon (to taste)
Ground black pepper (to taste)
3 tablespoons butter
2 tablespoons brown sugar
2 tablespoons honey
2 tablespoons orange juice
Chopped parsley (optional, for serving)
Instructions
Heat the oil in a large skillet over medium heat. Add carrots, salt, ginger, garlic powder (or cinnamon), and black pepper.
Cook, stirring often, for 15–20 minutes, until carrots are starting to soften but still slightly firm.
Add butter, brown sugar, honey, and orange juice. Stir to combine.
Simmer over medium to medium-high heat for 10–15 minutes, stirring frequently, until the glaze thickens and coats the carrots.
Reduce heat if glaze darkens or cooks too fast.
Serve immediately, topped with chopped parsley if desired.
