    Ingredients

  • 1 navel orange
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper, to taste
  • 1/4 cup slivered almonds, toasted
  • 3 tablespoons dried cherries
  • 4 cups shredded kale leaves
  • 2 cups fennel, thinly sliced
  • Instructions

    1. Cut the top and bottom off the orange. Set the orange on a cut side so it doesn’t wobble, then use a sharp knife to remove the peel and pith by cutting around the shape of the orange.
    2. Over a large salad bowl, use a paring knife to cut along each side of the white membranes to release clean orange segments. Let the segments and any juice fall into the bowl.
    3. Add the olive oil and balsamic vinegar to the orange segments and juice. Gently whisk until combined.
    4. Add the almonds and dried cherries, plus salt and pepper to taste.
    5. Top with the shredded kale and sliced fennel. Toss and serve.
