Kale & Fennel Salad

Instructions
- Cut the top and bottom off the orange. Set the orange on a cut side so it doesn’t wobble, then use a sharp knife to remove the peel and pith by cutting around the shape of the orange.
- Over a large salad bowl, use a paring knife to cut along each side of the white membranes to release clean orange segments. Let the segments and any juice fall into the bowl.
- Add the olive oil and balsamic vinegar to the orange segments and juice. Gently whisk until combined.
- Add the almonds and dried cherries, plus salt and pepper to taste.
- Top with the shredded kale and sliced fennel. Toss and serve.
