- 1 bunch of cilantro
- 1 cup pistachios
- 2-3 cloves of garlic
- 2 oz parmesan or aged jack cheese
- 1 cup olive oil
- juice of 1-2 lemons
- If the cheese is not grated, cut into a few small pieces and pulse in the food processor.
- Add everything else and pulse until smooth, adding more olive oil or garlic as needed.
- Serve as a dip, toss with pasta, or (my favorite) use to top baked fish.
