Purslane is one of the few plant sources of omega-3 fatty acids. A single serving of fresh purslane leaves (a little less than a cup) provides the minimum daily requirement of alpha-linolenic acid, a type of omega-3 fatty acid.

- Pluck off the leaves and toss the stems.
- Add a handful of Purslane to any summer salad.
