1 bunch Swiss Chard, stems removed
1-2 Tbsp olive oil
1/2 sweet onion
1/2 bunch basil leaves
4-5 cloves garlic
4 strips Fakin Bacon (optional)
1 1/2 Tbsp pizza seasonings
salt to taste
feta cheese (optional)
Finely chop onions and garlic.
Saute in olive oil over medium low heat.
After removing stems, chop up the chard leaves.
Add the chopped chard leaves to the saute pan with the onions and garlic.
Cover and let cook on very low heat.
Chop up a handful of fresh basil leaves.
Add to the saute pan with the garlic and onions.
Add the pizza seasonings to the pan
Add salt to taste.
Cover and cook on very low heat.
Trim the ends of the zucchini.
Keeping them whole, grate into long ‘noodle’ strips as shown below.
Chop the 4 strips of Fakin Bacon.
Add the Fakin Bacon to the saute pan nd stir well.
Add the zucchini ‘pasta’ and stir just until heated.
Add more salt in necessary.
Pepper to taste.
Top with Feta cheese or nutritional yeast.
