Saute onions in olive oil until very light golden.
Meanwhile, select suitable lettuce leaves, rinse and spin dry.
Add the tofu and grated zucchini to the sauted onions. Stir well over low heat. Add 1/2 tsp or more of taco seasoning. Stir well.
Add some golden Himalayan raisins. Stir well.
Add 1/2 cup cooked garbanzos. Mine were seasoned. See Recipe under ‘Seasoned Garbanzos”.
Spread 2 heaping tsp of hummus on each lettuce leaf.
Place 2 heaping Tbs of filling into each lettuce leaf.
Serve with Kale chips.
