Before processed foods, everything was made from scratch. Life was slower, most women stayed at home and were able to spend hours on food preparation. No wonder canned and processed foods became so popular. Though not as tasty as a home cooked meal, they were quick and easy.
Today, so many of us are moving away from processed foods and going back to meals made from scratch. Nearly everyone works outside the home and we live in a fast paced and furious society. Where do we get the time? Well, being the ingenious species that we are, many of us have devised time saving steps in our food preparations. I would like to share one of my favorites.
I always keep a jar of premade braising mix on hand. This is my best time saver. When I get home hungry and tired, I quickly cook up some grains, quinoa being my favorite as it only take about 20-30 minutes. Then, in a heavy skillet, I saute some type of protein in a little coconut oil. When the pan starts to get hot, I quickly add 2-4 tablespoons of the braising mix. It should sizzle and steam when it hits the pan. I continue to saute until the braising mix has evaporated to about 2 teaspoons, then I add a chopped veggie or two. Let them braise until done and serve over my cooked grains. This is quick, easy and delicious. The time saving key is having the braising mix pre-made. The taste key is letting the braising mix evaporate in the pan so that it gets slightly caramelized.
Here is my favorite recipe. I made this a few weeks ago and still have plenty left over as only a few tablespoons are used each time. It keeps very well when refrigerated.
2 cups of your favorite soy sauce or tamari
10 or more large cloves of garlic, pressed
2 Tbs fresh ginger, peeled and finely grated
1/4 cup apple cider vinegar
Sweetener to taste (I like it on the sweet side so I use about 1/4 cup or more of quality agave syrup)
1 tsp black pepper
1 tsp quality salt
Enough filtered water to fill the jar
Shake well before each use.
