3 large free range eggs
1/4 cup grated cheddar cheese or cheese of choice
1/2 cup mustard greens, braised (or a braising mix) To learn how to braise greens: http://www.jrorganicsfarm.com/?page_id=1669
2 tsp butter or margarine
2 Tbsp Parmesan Cheese, grated
Salt & Pepper to taste
Beat eggs in small bowl with fork or wire whisk until yolks and whites are well mixed.
Heat butter in 8-inch skillet over medium-high heat until butter is hot and sizzling.
As butter melts, tilt skillet to coat bottom with butter.
Quickly pour eggs into omelet skillet. Use a skillet that can placed in the oven.
While rapidly sliding skillet back and forth over heat, quickly stir eggs with a fork to spread them continuously over the bottom of the skillet.
Quickly add the braised greens evenly on top and lightly mix into the egg mixture.
Let stand over medium low heat a few seconds while gently using a spatula to lift the sides of the omelet from the pan.
When almost done, turn off heat.
Quickly top with parmesan cheese.
Place in the broiler, and broil quickly until lightly browned on top.
Remove from pan.
Tilt skillet and run a spatula under edge of omelet, then jerk skillet sharply to loosen omelet from bottom of skillet.
Sprinkle with salt and pepper and additional cheese if desired.
