¼ cup rice vinegar
3 TBS soy sauce
2 ½ tsp sugar
1 TBS plus 1 ½ tsp sesame oil
1 med onion diced
2 cloves garlic, minced
1 TBS minced fresh ginger
1 red OR yellow OR orange bell pepper, diced
2 med carrots, sliced thin
8 oz package of fake beef strips, cut in half or thin (optional)
1 bunch tatsoi, sliced and coarsely chopped
6 oz rice noodles
In a small saucepan, heat vinegar, soy sauce, ½ tsp sesame oil and sugar until sugar is dissolved.
Remove from heat.
In a wok or heavy pan, heat 1 TBS sesame oil.
Saute onion until translucent.Add garlic and ginger and cook until quite fragrant.
Add pepper, carrots and fake beef; cook for a couple of minutes.
Pour sauce from saucepan into wok and stir well.
Turn off heat and allow tatsoi to wilt.
Serve over cooked rice noodles.
Cook rice noodles according to package directions. When done, rinse briefly with cold water to decrease stickiness.
