¼ cup olive oil
1 bunch Swiss Chard, washed. – Strip the veins, cut into inch long pieces, set aside. Roughly cut up the leaves and set them aside also.
1 CSA bag green beans. Break the ends off the green beans, wash them, cut them into pieces a couple of inches long.
3 medium sized potatoes, peeled and cut into chunks
Several cloves of garlic, more is better than less, peeled and roughly chopped
1 tsp Salt
½ tsp Pepper
Bring 2 cups of lightly salted water to a boil
Add the potato chunks. Cover and simmer until almost done.
In a large pot, heat the olive oil over medium high heat.
Add the garlic and sauté.
Add the cut green beans. Saute for 1-2 minutes
Add the chard stems. Stir well and sauté 1 minute.
Add chard leaves. Stir well and cover.
Add the potatoes and potato cooking water.
Add the salt & pepper.
Let simmer longer, if necessary, until all the veggies are done.
