Two sprouted grain tortillas stuffed with avocado, tofu, squash, tomatoes, onion, garlic and taco seasonings.
Grated squash, minced garlic, chopped onions, crumbled tofu, one small tomato pureed
In a heavy skillet, saute onions and garlic in olive oil over medium high heat.
Add 3 tsp taco seasonings. I get mine from the bulk bins an Jimbos’ (health food market)
Mix the seasonings well and saute for a few minutes.
Add the pureed tomato.
Stir well and let saute another minute or so on medium high heat.
Add the tofu. Stir well.
Add the squash. Stir well.
Remove from pan and place on a warm, sprouted grain tortilla. Add some sliced avocado.
Top with another warm tortilla and cut into 4 equal wedges. Serve immediately.
