1 CSA bag of okra
1 quart pure water
2-4 T olive oil
5 cloves garlic, peeled
1 medium onion, chopped
4 medium small tomatoes, quartered
1 bunch basil leaves, stems removed
1 T pizza seasoning salt to taste (use good quality salt)
pepper to taste
Place quart of water in a saucepan.
Add a teaspoon of salt.
Bring to a gentle boil.
Add the okra, lower the heat and simmer for 8 minutes or until almost tender.
Place the basil leaves in a food processor.
Process until chopped course.
Add the cloves of garlic.
Process until garlic is chopped fine.
Add the tomatoes and process until tomatoes are chunky.
Meanwhile, in a skillet, heat the olive oil.
Add the onions and saute until fragrant stirring regularly.
Add the tomato basil mixture.
Drain the okra and add to the saute skillet with the tomatoes and onions.
Simmer for about 5 minutes.
To test for doneness , remove one okra pod and press it with a wooden spoon.
You can serve ‘as is’ or over rice or pasta.
I used the water that cooked the okra pods to cook my pasta.
