- 5 small parsnips
- 1 sweet potato
- 1 Tbsp. coconut oil
- 1 tsp. sea salt
- Preheat oven to 400°F.
- Chop parsnips and potatoes and place them in a medium bowl.
- Add coconut oil and salt, mix well.
- Place flat on a baking sheet and bake for 30-35 minutes.
- Remove when soft.
- Eat as a side or place on a big green salad.
