Here is a simple salsa recipe given to me by one of our market customers. What an easy way to use your cilantro! Though it uses canned tomatoes and jalapenos, it’s still suppose to be very good on huevos rancheros or with chips.
1 can whole peeled organic tomatoes
1 jalapeno from can (to make less hot, remove seeds)
2 Tbs juice from can of jalapeno
1 bunch cilantro (stems and all)
Blend until mixed well. This is not a chunky salsa.
