This recipe is delicious! It’s my new favorite dish. Even though I prepared a whole pound of beans, I was still hungry for more!
The Finished Dish:
Dried basil leaves were crushed on top right before serving.
1 bag green beans
3/4 cup diced tomatoes
1/3 cup chopped fresh basil, loosely packed
1 T minced onion
1 small clove garlic, pressed or minced
juice of 1/2 small lemon
1/2 tsp crushed dried rosemary
2 T olive oil
2 tsp apple cider vinegar (not pictured)
1/2 tsp agave (not pictured)
1/2 tsp salt or to taste
Trimming The Beans:
Use herb snipping scissors to trim the ends of the beans.
Slicing The Beans:
With a sharp paring knife, split the beans. Then cut into 1 inch diagonals.
Place all the ingredients into a bowl and mix well. Cover and refrigerate for one hour or more. Taste and adjust seasonings if necessary. I marinated them for about 3 hours. They were perfect!!
