- 1 small head cauliflower (about 2 cups), florets only, finely chopped
- 4 dates (pitted and soft), roughly chopped
- ¼ cup mint leaves, finely chopped
- ¼ cup cashews, roughly chopped
- 2 Tbsp. cacao nibs
- 1 lemon, juiced
- 2 Tbsp. olive oil
- 1 dash cayenne pepper
- Add all ingredients to a medium bowl and stir well, use your hands to really coat the cauliflower.
- Serve right away!
