1 bunch rapini, chopped (see tips on preparation – Preparing Rapini).
2-3 Tbs filtered water
4 Large tomatoes, chopped
1 sweet onion, chopped
2-4 cloves garlic, thinly sliced
1 jalapeno, seeds removed, chopped (optional)
3 Tbs or more olive oil
1/2 tsp crushed oregano leaves
1/4 tsp ground cumin
1/4 tsp ground coriander seeds
3/4 tsp turmeric
1/2-1 tsp sea salt or to taste
Heat olive oil on medium high heat in a heavy skillet.
Saute the onions, garlic and jalapeno.
When almost done, add the oregano, cumin, coriander and turmeric.
Stir for 1 minute.
Add rapini and saute for 3-4 minutes, adding 1 Tbs of water and let braise until almost done.
Add tomatoes and simmer for a few minutes.
Serve with bread or over pasta.
