2lbs. chicken bratwurst sausage links
2-3 slices of red onion, finely diced
2 cloves garlic, diced
1 bunch rapini or broccoli raab, chopped
4 servings mashed potatoes, cooked
Gorgonzola cheese, to taste
Cook sausage in pan.
In another pan heat olive oil and sauté onion, garlic and rapini until vegetables are limp.
To serve, put mashed potatoes on plate and top with greens.
Slice sausage and place on top.
Sprinkle with gorgonzola cheese if desired.
