When making fresh juice using celery, cucumber, apple and carrots, there’s a lot of pulp that’s usually dumped in the compost. Isa has discovered a better way to use it.
1 rib celery
4 medium carrots
Juice the above ingredients. Set aside the pulp.
2 tbsp olive oil
5 cloves garlic, minced
1 onion, minced
1/4 lb ground turkey or beef
pulp from juice
1 jar of organic tomato sauce ( you can add more depending on how thin you want the sauce),
1/2 cup water
1. Saute garlic and onion in olive oil for 3 minutes.
2. Add ground turkey or beef.( medium heat)
3. After 15 minutes, add JUICE PULP, organic tomato sauce and water. Bring to a boil then lower heat and simmer, partially covered in 15 minutes or until meat is cooked.
Prepare 1 pack of 1 lb pasta as directed.
While still hot, place pasta on a large serving dish where sauce can be tossed or place on individual plates where sauce could also be added as a topping .
You may mix any fresh herb, minced (basil, oregano, thyme or marjoram)into the sauce. I do not cook the herb. I add this into the pot after I turn off the heat immediately before serving.
I serve this with salt and pepper on the side. I personally don’t like a lot of salt so I don’t use it when cooking.
