- 2-4 collard greens
- 1 avocado
- 1 tomato
- 2 cups brown rice, cooked and cooled
- 2 cups black beans. Rinsed and cooled
- Trim collards, removing the steam.
- Slice avocado and tomato.
- Place hummus on one of the leaves, then rice, beans, avocado and tomato and roll up.
- Repeat until full of all of the ingredients are used up.
- Usually makes enough for 2 people.
- Feel free to add hot sauce of whatever condiments you think will be best.
