We bbq ours as well! I just brush with a little olive oil and set them on the grill until they look bright in color and the top starts to ‘cook’ a little…..till nice and crisp.
Another thing I do with the squash is make a saute/stir fry with the sweet onions, garlic, yellow and green squash and the green beans cut into bite size pieces. Saute in olive oil, then add a can of white beans and some chicken stock for flavor. Serve with brown rice, or pasta or bread. I sometimes put chicken in it as well. Yummy!

Here is what I like to do with my grated zuchinni squash . . . I use it in my grandmother’s cookie recipe along with some chocolate and some chocolate chips . . . very nice and a great way to get kids to eat their vegetables. Or, instead of the chocolate, use apple and spice.
