1/2 tub firm tofu
3/4 tsp sea salt
1 tsp turmeric
1 TBS favorite herb blend, crushed fine (I use Fines herb mix)
2 TBS olive oil
1/2 yellow onions, chopped fine
3 cloves garlic, minced
1/4 cup finely chopped bell pepper (any color but I prefer red)
1/2 cup fresh mushrooms, sliced thin
1/2 bunch mizuna , chopped fine (I hold the leaves together and remove about 2 inches of bottom stems, then chop the rest fine)
In a med size bowl, mash the tofu with a fork or bean masher until very crumbly.
Add the salt, turmeric, herbs and mix thoroughly
Heat a heavy skillet over medium high heat.
When oil is hot but not smoking, add onions, garlic, bell peppers and mushrooms.
Saute for 3-4 minutes, stirring frequently.
Add tofu and saute for 1-2 minutes more stirring frequently.
Turn off heat.
Add chopped mizuna and stir unit wilted.
Serve with toast.
