1 Bunch baby leeks
1 3/4 cups soaked cashews (measure afer soaking them for 12 hours)
4 cups distilled water
1 med/small avocado
1/2 clove garlic
Pepper flakes (optional)
1 tsp ‘Real’ salt or Himalayan salt
Cut off the leek roots.
Wash the leek stems thoroughy getting down inside the leaves. Remove any tough or yellow outer leaves.
Cut leeks into 2-3 inch pieces including green leaves.
Place everything in a high speed blender and blend on high speed until creamy, about 30 seconds.
If necessary, heat until lukewarm.
Garnish with pepper flakes and serve with crackers.
Makes about 6 cups.
