I came up with the recipe after constantly hearing my growing (and always hungry) little boys say, “Mommy, can I have a snack?” They love them. I love that they’re packed with kale and cranberries (two superfoods) and that the nuts help to keep their little tummies full.
5-6 stalks of kale or other deep leafy green
½ c. raw cashews (preferably soaked)
1 ½ c. raw walnuts (preferably soaked)
10 almonds (preferably soaked)
3-4 tbsp of Carob or cocoa powder, plus extra 1/3 cup
½ c. dried unsweetened cranberries or raisins
Mix all ingredients in the food processor in the order listed (except for the 1/3 c. cocoa powder and the cranberries).
The mixture should thick, a little thicker than peanut butter.
Stir in the cranberries or raisins.
Make balls by scooping out some of the mixture (about a spoonful) and rolling it between your hands.
Pour the remaining cocoa powder onto a cutting board and roll each ball in the powder.
Store in a sealed plastic bag in the refrigerator.
Makes approximately 12-18 balls.
