This is a recipe from CSA member Dawn. She said she made it for her husband and daughter and they loved it and that it’s so simple but tastes so delicious.
1 bunch kale, stems removed
1 eggplant, peeled and dices into small pieces
Put some olive oil in a pan and add the kale and eggplant, stirring to make sure everything has a little oil on it and cooks, about 10 minutes or so (depending on how high you have the fire). The eggplant will get soft and you’ll see some browning and the kale will get soft and parts of it will get slightly crispy.
Serve warm…it’s so yummy.
