1 egg white
1 Tbsp water
pinch of black pepper
1 cup bread crumbs
1 cup pasta sauce
shredded Mozzarella cheese
4 Tsp chopped fresh basil
Preheat oven to 375 degrees.
Cut the eggplant in rounds about 1/4 inch thick.
Cover a baking sheet with the cooking oil spray.
Put the eggwhite and water in a shallow dish and beat. Add pepper.
Put the bread crumbs in another shallow dish.
Keep one hand went and one dry: with the wet hand put the eggplant in the egg mix. With the same hand put the eggplant in the bread crumbs.
With the dry hand put the eggplant on the baking sheet.
Once you finish put more cooking spray over the eggplant.
Bake for about 10 minutes on each side.
Remove from oven.
Spread pasta sauce over the eggplant.
Sprinkle with mozzarella cheese and then Parmesan.
Put back in the over for 5 more minutes.
Add cut tomatoes and fresh chopped basil on top.
