- 1 cucumber
- 2-4 small carrots
- 1 tomato
- 1⁄2 cup brown rice, cooked and cold
- Hummus, Store bought or homemade
- Collard greens or lettuce, for wrapping
- Slice Cucumber, carrots and tomatoes into strips.
- Using a collard or lettuce, place a little hummus and brown rice in the green, then add vegetables and either roll up or hold taco style.
- Tastes great dipped in mustard.
