This is what CSA member Alicia has been doing with her squashes:
We have been marinading the squash with some onion and then barbecuing them!
Here’s how they do it:
We slice them lengthwise, and then slice an onion into thick rings (trying to keep the rings together into one slice).
Then we toss them in a bowl with some olive oil, balsamic vinegar, kosher salt and fresh ground pepper.
Let the mix sit for about 5 minutes (just enough time for the grill to heat up).
Place the squash and onion on the barbecue and cook for approximately 5 minutes on each side.
Serve with some cheese as a veggie sandwich, or chop it up and toss with some pasta.
The barbecue makes it taste just heavenly!!!!
