3 Tbsp pine nuts
2 Tbsp olive oil
1 Tbsp fresh lemon juice
sea salt and freshly ground pepper
1 large head romaine lettuce, cut in half lengthwise then thinly sliced crosswise
1 bunch arugula, thick stems discarded
1 cup grape tomatoes, halved
1/4 cup feta cheese
In a large bowl, combine the olive oil with the lemon juice and season with sea salt and pepper.
Add the lettuce, arugula, tomatoes, feta cheese and pine nuts.
Serve right away.
