- 3 Tbsp pine nuts
- 2 Tbsp olive oil
- 1 Tbsp fresh lemon juice
- sea salt and freshly ground pepper
- 1 large head romaine lettuce, cut in half lengthwise then thinly sliced crosswise
- one bunch arugula, thick stems discarded
- 1 cup grape tomatoes, halved
- 1/4 cup feta cheese
- In a large bowl, combine the olive oil with the lemon juice and season with sea salt and pepper.
- Add the lettuce, arugula, tomatoes, feta cheese and pine nuts.
- Toss thoroughly.
Serve right away.
